Our "Keto" Taco Soup

There are several recipes I've seen for Taco Soup, but here is my own spin, because it makes us happy. Some recipes use a slow-cooker, but I just do it all in a pot and it's done within half an hour.

                        








Our "Keto" Taco Soup
Serves About 8

Nutritional Information uses my ingredients below, including El Paso Taco Seasoning.

Ingredients

  • 2 lbs ground beef
  • 3 cups chicken broth
  • 2 cans Fire Roasted Dice Tomatoes (We prefer Rotel)
  • 1 8oz block of cream cheese
  • Taco Seasoning (2 packets of store bought... preferred based on carbs or homemade)

Added Toppings - Fresh Organic Jalapenos, Shredded Cheddar Cheese, Heavy Whipping Cream or Sour Cream

Directions

  1. Cook the beef in a pot with the Taco Seasoning (2 packets or 4 TBSP).
  2. Once the beef is cooked through, add in the broth, tomatoes (with liquid), and cream cheese.
  3. Let simmer until the cream cheese is dissolved.
  4. Enjoy with preferred toppings.
